Ingredients:
- 2 Eggs
- 1 cup Sugar
- ¼ tsp Allspice
- ½ tsp Cinnamon
- 2 cups Wheat Flour
- 1 tsp Baking powder
- 3 overly ripe Bananas
- 1 stick Butter, softened
- ½ cup Walnuts, optional
Method:
- Preheat the oven to 325°F.
- Sift all ingredients together and set aside.
- Cream butter and sugar until incorporated.
- Add eggs one at a time and beat until egg disappears and mixture becomes light and fluffy.
- Add bananas to creamed sugar mixture and beat slowly at first and gradually increase speed to thoroughly break up bananas.
- Add dry ingredients now and mix completely.
- Add nuts and mix until incorporated. Pour batter into greased loaf pan.
- Bake for 60 minutes. Test for doneness with wooden skewer.
Tip: Line baking pans with foil so that they're a easy to clean.
