Kesar Rice Recipe


Ingredients:

  • 4 Cloves
  • 2 tsp Salt
  • 4 Bayleaf
  • 2 cup Rice
  • 6 tsp Ghee
  • 4 cup Water
  • 2 tbsp Hot water
  • 1 Cinnamon stick
  • 1 tsp Cumin seed
  • 1 cup sliced Onion
  • 1 tsp Kesar threads
  • 4 Black Cardamom

Method:

  1. Soak saffron in hot water.
  2. Wash and soak rice in 3 cups water.
  3. Heat ghee and fry onions, untill golden, keep aside.
  4. Add cinnamon, cloves, cumin, cardamoms and salt. After sometime, 1 minute, add the bay leaves and half of the onions.
  5. Drain the rice and reserve the water.
  6. Add the rice grains and stir for 4-5 minutes until all the water evaporates. Add the water and bring to a boil. Add saffron and its water and pressure cook.
  7. Remove from the heat and allow the pressure to drop by itself.


Tip: Never stir rice while it cooks because it will crush the rice grains, releasing starch, and make the rice gummy
