Makhane ki Kheer Recipe


Ingredients:

  • 5 cups Milk
  • 2 tbsp Ghee
  • ˝ cup Sugar
  • 10-12 Almonds
  • 1 cup Lotus seeds
  • 4-5 green Cardamoms

Method:

  1. Heat ghee and over low flame sauté the lotus seeds.
  2. When cooled, pound them coarsely.
  3. Put the lotus seeds and milk in a deep pan, bring to a boil. Simmer over low flame, stirring occasionally till the lotus seeds get cooked and the milk thickens.
  4. When cooked, add sugar and cardamoms.
  5. Stir till the sugar is dissolved and then simmer for 10-15 minutes after that.
  6. Garnish with almonds. Serve hot or chilled.


Tip: Always strain sugar or jaggery syrups before adding to sweets, so that the muddy grains do not taste like grit in the sweet dishes. Allow the grit to settle below before straining.
