Honey-Glazed Sweet Potatoes Recipe


Ingredients:

  • 1 tbsp Butter
  • 1/3 cup Honey
  • 1 tbsp Cornflour
  • ½ tsp ground Ginger
  • 2/3 cup Orange juice
  • ½ tsp ground Nutmeg
  • 750 gms Sweet Potatoes, peeled and quartered

Method:

  1. Combine sweet potatoes and 1/3 cup orange juice in a 2 litre microwave-safe baking dish.
  2. Sprinkle with ginger and nutmeg. Dot with butter. Cover and microwave at high for 7-10 minutes or until sweet potatoes are tender, stirring halfway through cooking time.
  3. Combine cornflour, remaining 1/3 cup orange juice and honey in a medium microwave-safe bowl. Microwave at high for 2 minutes or until thickened, stirring every 30 seconds.
  4. Drain liquid from sweet potatoes. Add to honey mixture. Microwave at high for 1 minute.
  5. Pour sauce over sweet potatoes and microwave at high for 1 minute or until sweet potatoes are thoroughly heated.


Tip: After frying paneer (cottage cheese), put the hot pieces in salted cold water. These pieces should be added only at the final stages of the dish. This will keep them soft and prevent them from getting rubbery
