Mango chicken Recipe
Ingredients:
- 2 tbsp Ghee
- 300 ml Cream
- 1 tsp Turmeric
- 750 gms Mangoes
- 2 tbsp Lemon juice
- 2 tsps grated Ginger
- ½ tsp Cumin powder
- 2 pods Garlic crushed
- 1 kg Chicken thigh fillets
- ¼ tsp Cinnamon powder
- ½ tsp Coriander powder
- 300 gms Onions, finely chopped
Method:
- Blend or process mangoes until pureed; strain into small bowl.
- Combine chicken, garlic and ginger in large bowl; cover refrigerate 3 hours or overnight.
- Barbecue or griddle-fry chicken until tender; cut into 2cm pieces.
- Heat ghee in large pan; cook onions, stirring, until browned lightly, add spices stir until fragrant.
- Add chicken, mango puree, cream and juice; cook, stirring occasionally, about 10 minutes or until mixture is thickened slightly.
