Prawn and Green Mango Curry Recipe


Ingredients:

  • 2 tbsps Oil
  • 1/3 cup Cream
  • 7-8 Curry leaves
  • 500 ml boiling Water
  • 40 gms Coconut Milk powder
  • 1½ kg uncooked king Prawns
  • 200 gms Onion, finely chopped
  • 800 gms green Mangoes, peeled sliced


  • Spice Mixture
  • 1 tsp Salt
  • ½ tsp Turmeric
  • 2 pods Garlic, chopped
  • 2-tsp Coriander powder
  • 3 long dried red Chillies, chopped
  • 45 gms desiccated Coconut, toasted

Method:

  1. Shell and devein prawns, leaving tails intact.
  2. Heat oil in large pan; cook onion, stirring until browned lightly. Add spice mixture; cook stirring until fragrant.
  3. Add prawns, mangoes, leaves and blended coconut milk powder and boiling water; simmer; uncovered, about 5 minutes until prawns are tender. Remove from heat, stir in cream.
  4. Spice mixture: grind or process all ingredients until crushed.


  5. Serves: 4-6
