Prawn and Green Mango Curry Recipe
Ingredients:
- 2 tbsps Oil
- 1/3 cup Cream
- 7-8 Curry leaves
- 500 ml boiling Water
- 40 gms Coconut Milk powder
- 1½ kg uncooked king Prawns
- 200 gms Onion, finely chopped
- 800 gms green Mangoes, peeled sliced
- 1 tsp Salt
- ½ tsp Turmeric
- 2 pods Garlic, chopped
- 2-tsp Coriander powder
- 3 long dried red Chillies, chopped
- 45 gms desiccated Coconut, toasted
Spice Mixture
Method:
- Shell and devein prawns, leaving tails intact.
- Heat oil in large pan; cook onion, stirring until browned lightly. Add spice mixture; cook stirring until fragrant.
- Add prawns, mangoes, leaves and blended coconut milk powder and boiling water; simmer; uncovered, about 5 minutes until prawns are tender. Remove from heat, stir in cream.
- Spice mixture: grind or process all ingredients until crushed.
Serves: 4-6
