Sweet Potato Fries Recipe


Ingredients:

  • 1 pinch Salt
  • ¼ cup Sugar
  • 8 cups Water
  • 1 tbsp Cinnamon
  • 2 tbsps Brown sugar
  • 2 tbsps granulated Sugar
  • 4 medium Sweet Potatoes

Method:

  1. Clean and slice sweet potatoes into ¼-inch-thick and about 4 to 5 inch-long strips.
  2. In a large bowl, dissolve sugar into the water. Soak the potato strips for 3-4 hours; drain well.
  3. In a small bowl, mix brown sugar, 2 tablespoons sugar, cinnamon and salt. Set aside.
  4. In a large, heavy-bottom frying pan, heat oil till smoky.
  5. In three to four batches, cook fries in oil for 4 to 6 minutes or until crisp. Fries will be dark. Remove fries from oil using a slotted spoon and drain on a tray lined with paper towels.
  6. Sprinkle with cinnamon-sugar mixture while hot and serve.


  7. Makes 4 servings


Tip: A very stale loaf of bread can be considerably freshened by dipping it in milk or water (or a mixture of the two) for about a minute. After this, put it into the oven to crisp for about fifteen minutes.
