Gingered Chicken with Mango Recipe
Ingredients:
- ¼ cup Oil
- ¼ tsp Nutmeg
- 1 tsp Soya sauce
- 2 tsps Ground Ginger
- ¼ tsp Ground Cloves
- 2 pods of Garlic, crushed
- ¼ cup Dark Brown sugar
- Salt and ground pepper to taste
- 1 cup Mangoes, peeled and diced
- 1 kg Chicken breast fillets, skinned
Method:
- Heat the oil in a heavy frying pan.
- Add the garlic and sauté for a few minutes. Then, add the chicken fillets. Cook for about 15-20 minutes until the chicken is cooked through.
- Meanwhile, in a medium-sized bowl, combine the peeled and diced mango with the sugar, cloves, ginger, and nutmeg.
- Pour the mixture over the cooked fillets and gently mix to cover the chicken pieces.
- Add soya sauce, salt, and pepper to taste. Cook for about 10 more minutes.
- Serve hot with a fresh green vegetable and a side dish of rice.
