Ingredients:

For the Roomali Rotis
- 250 gm Wheat Flour
- 150 gm Refined Flour
- A pinch of Salt
- 1 tbsp Oil
- 1 tsp Cumin seeds
- Salt according to taste
- 50 gm Onion, chopped
- ½ tsp Turmeric powder
- 1 tsp Red Chilli powder
- 1 tsp Coriander powder
- 1 tsp Green Chillies, chopped
- 75 gm Capsicum, cut into strips
- 200 gms Cottage cheese, cut into 1 inch x ½ inch fingers
- 8 Roomali Rotis
- Mint Chutney
- 1 Onion, sliced
- 4 Green Chillies
- 4 Lemon Wedges
- A few Onion rings
- 1 Cucumber, chopped

Method:

For the Roomali rotis
- Combine all the ingredients and knead into a soft dough, adding a little water.
- Make into small balls and roll into rotis. Slap each roti with the hands and toss in the air to expand.
- Cook over inverted griddle till done.
- Heat oil, add cumin seeds, onions and capsicum, ginger, tomatoes and green chillies. Cook.
- Add turmeric powder, red chilli powder, coriander powder and seasoning and saute for a while.
- Add cottage cheese and mix.
- Add the stuffing in the roomali rotis, add sliced onion, mint chutney and roll the rotis.
- Garnish with a few Onion rings, chopped Cucumber, green chilli and a lemon wedge and serve.
