Spiced Bhindi with Almonds Recipe
Ingredients:
- 225 gms Okra
- 25 gms Butter
- 1 tsp Paparika
- 1 tsp Cumin seeds
- 1 tbsp Sunflower Oil
- 2 Garlic Pods, crushed
- 1 tsp Coriander powder
- 1 Piece of Ginger, 1" long, grated
- 50 gms Blanched Almonds, chopped
- Salt and Freshly Ground Black Pepper
Method:
- Trim just the tops of the okra stems and around the edges of the stalks. They have a sticky liquid which oozes out if prepared too far ahead, so trim them immediately before cooking.
- In a shallow, flameproof casserole, fry the almonds in the butter until they are lightly golden, then remove and set aside.
- Add the sunflower oil to the casserole and fry the okra, stirring constantly, for 2 minutes.
- Add the garlic and ginger and fry gently for a minute, then add the spices and cook for another minute or so stirring all the time.
- Pour in about 300 ml water. Season well,cover and simmer for about 5 minutes or so, until the okra feel just tender.
- Finally, mix in the fried almonds and serve piping hot.
Tip: Soak onions in milk for a little while before frying, they’ll turn out crispy and crunchy.
