Spiced Bhindi with Almonds Recipe


Ingredients:

  • 225 gms Okra
  • 25 gms Butter
  • 1 tsp Paparika
  • 1 tsp Cumin seeds
  • 1 tbsp Sunflower Oil
  • 2 Garlic Pods, crushed
  • 1 tsp Coriander powder
  • 1 Piece of Ginger, 1" long, grated
  • 50 gms Blanched Almonds, chopped
  • Salt and Freshly Ground Black Pepper

Method:

  1. Trim just the tops of the okra stems and around the edges of the stalks. They have a sticky liquid which oozes out if prepared too far ahead, so trim them immediately before cooking.
  2. In a shallow, flameproof casserole, fry the almonds in the butter until they are lightly golden, then remove and set aside.
  3. Add the sunflower oil to the casserole and fry the okra, stirring constantly, for 2 minutes.
  4. Add the garlic and ginger and fry gently for a minute, then add the spices and cook for another minute or so stirring all the time.
  5. Pour in about 300 ml water. Season well,cover and simmer for about 5 minutes or so, until the okra feel just tender.
  6. Finally, mix in the fried almonds and serve piping hot.


Tip: Soak onions in milk for a little while before frying, they’ll turn out crispy and crunchy.
