Green Beans with Tomatoes Recipe


Ingredients:

  • 2 tbsp Olive oil
  • 2 tsps Lemon Juice
  • 150 ml Dry White Wine
  • 16 Stoned Black olives
  • 1 Large Onion, finely sliced
  • 2 Garlic Pods, finely chopped
  • 6 Ripe Plum Tomatoes, peeled, seeded and chopped
  • 450 gms French green beans, sliced in half lenghtways
  • Salt and Freshly Ground Black Pepper

Method:

  1. Heat the oil in a large frying pan. Add the onion and garlic and cook for about 5 minutes, until the onion is softened but not brown.
  2. Add the chopped fresh plum tomatoes, white wine, sliced french green beans, black olives and lemon juice and cook over a gentle heat for a further 20 minutes. Stir the vegetables from time to time until the sauce is thickened and the beans are just tender.
  3. Season with salt and black pepper to taste and serve.


Tip: After frying paneer (cottage cheese), put the hot pieces in salted cold water. These pieces should be added only at the final stages of the dish. This will keep them soft and prevent them from getting rubbery
