Courgettes with Mushrooms Recipe


Ingredients:

  • 1 tsp Ground Cumin
  • 2 tbsp Vegetable Oil
  • ½ tsp Chilli Powder
  • 1 tsp Ground Coriander
  • 1 Medium Onion, chopped
  • 225 gms Mushrooms, sliced
  • 2 Medium Courgettes (Zucchini)
  • 1 tbsp Chopped Coriander
  • 3 tbsps Single (light) Cream

Method:

  1. Heat the oil and fry the chopped onions until golden brown. Lower the heat to medium, add the ground coriander, cumin, salt and chilli powder and stir together well.
  2. Once the onion and the spices are well blended, add the mushrooms and courgettes and stir-fry gently for about 5 minutes until soft. If the mixture is too dry just add a little water to loosen.
  3. Finally pour in the cream and mix it well into the vegetables.
  4. Garnish with fresh chopped coriander, if wished and serve immediately.


Tip: After frying paneer (cottage cheese), put the hot pieces in salted cold water. These pieces should be added only at the final stages of the dish. This will keep them soft and prevent them from getting rubbery
