Okra in Yogurt Recipe


Ingredients:

  • 450 gms Okra
  • 2 tbsp Corn Oil
  • ½ tsp Onion seeds
  • 1 tbsp Low Fat Yogurt
  • ¼ tsp Turmeric Powder
  • 1 Medium Onion, sliced
  • 2 tsp Desicated Coconut
  • 1 tbsp Chopped Coriander
  • 2 Medium Tomatoes, sliced
  • 3 Medium Green Chillies, chopped
  • Salt according to Taste

Method:

  1. Wash, top and tail the okra, cut into 1 cm/ ½ in pieces and set aside.
  2. Heat the oil in a medium frying pan, add the onion seeds, green chillies and onion and fry for about 5 minutes until the onion has turned golden brown.
  3. Lower the heat and add the turmeric, desicated coconut and salt and fry for about 1 minute.
  4. Never add the okra, turn the heat to medium-high and quickly stir-fry for a few minutes until lightly golden.
  5. Add the yogurt, tomatoes and finally the fresh coriander. Cook for a further 2 minutes.
  6. Transfer into a serving dish and serve immediately.


Tip: Potatoes rot quickly if stored near onions. To prevent potatoes from budding, place an apple in the bag with the potatoes.
