Tomato Rice Recipe


Ingredients:

  • 1 ½ tsp Salt
  • 50 gms Peas
  • 2 tbsps Corn Oil
  • 1 tsp Ginger Pulp
  • 1 tsp Chilli Powder
  • ½ tsp Onion seeds
  • 1 Medium Potato sliced
  • 1 Medium Onion, sliced
  • 2 tbsp Chopped Coriander
  • 1 Orange or Yellow Pepper, sliced
  • 400 gms Basmati Rice, washed
  • 700 ml Water

Method:

  1. Heat the oil and fry the onion seeds for about 30 seconds. Add the sliced onions and fry for about 5 minutes.
  2. Start adding the sliced tomatoes, pepper, ginger, garlic, chilli powder, fresh coriander, potatoes, salt and peas and stir-fry over a medium heat for a further 5 minutes.
  3. Add the rice and stir for about 1 minute.
  4. Pour in the watere and bring to the boil, then lower the heat to medium. Cover and cook for 12-15 minutes. Leave the rice to stand for 3 minutes and then serve.
