Chopra played Khan's girlfriend in her latest movie Don, which was released last month.
"He is just plain yummy," Chopra told a movie magazine. "It took me a while to snap out of my fixation and treat him as a co-star."
Khan "just inspires you to give your best," she said. "Even now, after so many years, he seems to be just a regular guy doing his job."
Don, about a mafia head who eludes the police, is a remake of the 1978 Bollywood classic which starred movie legend Amitabh Bachchan and beauty queen Zeenat Aman.
Chopra, 24, said she has been Khan's fan since she saw him in the 1995 blockbuster Dilwale Dulhaniya Le Jayenge.
Khan, 41, is one of the biggest Bollywood heartthrobs of the past decade and one of the highest-paid actors in India's movie world.
Bollywood, India's prolific and wildly popular Hindi-language film industry, is based in Mumbai.
